The Avignonesi 2005 Vin Santo di Montepulciano DOC, a sweet wine steeped in Tuscan tradition, is often referred to as ‘holy wine’. Its origins trace back to the Renaissance, coinciding with the emergence of the Avignonesi family. The production of this wine relies on a yeast known as ‘madre’, which has been handed down through generations and contributes to its distinctive, ethereal flavor. This wine undergoes an extraordinarily lengthy ageing process, during which more than half of the initial volume evaporates. It’s estimated that the quantity of grapes needed to produce a single 375 ml bottle could yield twenty-four 750 ml bottles of regular wine.
