Zyme

Zýmē is a winery founded by Celestino Gaspari that is based on naturalness, fermentation and transformation. The name Zýmē, which means “yeast” in Greek, well expresses the philosophy of the firm. The goal of Zýmē is to create a balance between man and nature, following a new humanism of the earth that values and protects the territory. For this reason, Zýmē adopts eco-sustainable practices and respects natural rhythms in wine production, which is seen as an expression of simple and harmonious life. Zýmē combines tradition and innovation by proposing both classic Valpolicella wines and original experimental wines. The wine of Zýmē tells the culture, history, tradition and innovation of the territory but also stimulates the mind and feeds Celestino Gaspari’s project.
